It was so simple to make and so flavorful with just a handfull of ingredients."pol roti" in Sinhalese translates to coconut rotti or coconut flatbread.it can be eaten breakfast, lunch, dinner or tea time.most of time sri lankan people eat coconut roti in the morning with dhal curry, coconut sambol or lunu miris.we trend to use more of tropical flavor. Sri lanka being a costal island uses lot of coconut in their cooking.sri lankan pol roti is basically made from grated coconut and mix with chopped onion, green chilli, curry leaves, leeks and salt.
I grew up with my grandmother home when I was kid.I remember very well that grandmother made roti every morning.made it with different flavors.that was the best time of my life.♥️🥲
Coconut roti ingredients
✅️Flour
I use bread flour for this.If you don't have bread flour.you can add all purpose flour.
If you follow diet meal plan or if you have diabetes.you can use brown flour, kurakkan flour, oats flour or rice flour for this.
✅️Coconut
You can use fresh grated coconut for this.In sri lanaka,we can easily find fresh coconuts.also Coconut milk is often used in Sri Lankan dishes.those who live outside of Sri Lanka can't find fresh coconuts.as a solution to that,you can use dessicated coconut for making roti.
✅️Onion
Onion is used to flavor the roti. You can make this without onion,it is not necessary.if you add onion to this, you can add sweet onion, red onion and shallots.
✅️Green chilli
Green chillies are added to the roti to increase the spiciness. In Sri Lanka we like to eat a spicy food. If you are not a spicy eater, you can make it without green chili.
✅️Carrot
Others don't add carrots to the roti, but I add some chopped carrots to this.then the taste will increase.🤤
✅️Leeks
This also increases the taste like the carrot.take the green part of leeks for this.
✅️Curry leaves
My favorite thing is that curry leaves.add flavor and aroma to the roti.there are many nutrients of curry leaves.

1.Get fresh grated coconut.Coconut is definitely needed to make the roti. Coconut gives good taste and softness to the roti. If you make this without coconut, the roti will be very tough.
2.If you add coconut water instead of water to make the roti, the taste will increase even more.
3.Once the dough is made, it should be firm without the soft so that we can roll it by hand.
4.Do not add the all water at the time.add a little by little and mix them in a circule motion to get large lumps.and then you can make it to a ball.

How to make sri lanka coconut roti
1.Get the large bowl and place the flour, coconut, salt, onion, green chilli, curry leaves,carrot, leeks and oil.
2.Add the water a little at time and Knead well with fingers.
3.Then sprinkle some flour on the table and roll out the dough with a rolling pin.
4.Now take a round cutter and cut the roti into circles. If not cut dough into small ball and sprinkle some flour on the table and then roll it out to a circle using a rolling pin.
5.Preheat a skillet or non-stick pan over medium heat.
6.When the skillet heated up.transfer a roti into skillet and cook about 2-3 minutes both side.
7.now eat the roti warm.
Can we freeze roti?
yes,you can.wrap the roti with wrapping paper and freeze it.we can keep it for a month.when you want have cook.take it out of the freezer about half an hour and it can be cooked by letting the ice become less.

For making roti
1.300 gram flour
2.120 gram grated coconut
3.One chopped onion
4.One chopped green chilli
5.5 chopped curry leaves
6.One chopped small carrot
7.25 gram chopped leeks
8.salt to taste
For green sambol spice
1.Three nai miris or green chilli
2.50 gram grated coconut
3.salt to taste
4.One garlic
5.1 tsp lime juice
6.2 tbsp water
7.3 small red onion
For black tea
1.1 tsp tea leaves (BOP)
2.3 tsp suger
3.1/2 cup hot wated
4.raw ginger (small peaces )
Method

1.Get a blender and add all ingredients.
2.After then blend about 30 second
Black tea
1.Get a large tea pot add tea leaves,suger, ginger and hot water mix well and Cover with a lid and leave for 3 minutes.
